Cut the beef into thin slices (2 mm thick) against the grain. Place in a mixing bowl and add 1 g salt, 5 tsp Shaoxing rice wine, 5 tsp dark soy sauce, 1 pc egg, 15 tbsp cornstarch, 30 tbsp water. Mix well until absorbed, then add 5 tsp sesame oil and stir again.

In a wok, heat 5 tsp cooking oil with dried chillies and Sichuan peppercorns until fragrant, being careful not to burn them. Transfer to a chopping board and chop finely.

Use the same wok to lightly wilt 80 g romaine lettuce and 30 g bean sprouts. Once done, transfer them to a serving bowl.

Add 30 tbsp cooking oil to the wok and stir-fry 10 g ginger, 3 pc garlic, 30 tbsp Sichuan chilli bean paste, and 5 tsp chilli powder over low heat until fragrant. Add 500 ml unsalted stock or water and bring to a boil.

Reduce the heat. Add the marinated beef slices one at a time, simmering until cooked through (no pink visible). Pour the beef and broth over the crispy vegetables.

Add the garlic and chopped spicy topping over the beef. Heat 30 tbsp cooking oil until smoking, then pour it over the beef and garnish with 10 g coriander. Serve immediately.
